BBQ Food sauces and rubs to enhance your BBQ cooking
When it comes to BBQ food, we all have a favourites. Whether its a monumental burger, vegetable skewers or a stunning fish dish, the fact is that the BBQ provides us with the opportunity to try out new things alfresco style, especially when the weather is being kind.
Scouring the internet will no doubt provide you with a huge array of differing recipes which offer the delights of almost every type of cuisine you could think of, but the reality is that with a few ingredients it is possible to come up with an impressive array of different taste sensations to wow your family and friends. Below we have compiled a couple of simple BBQ related additional extras in the form of sauces and rubs that can be applied to any meat to give that outstanding taste you have been longing for.

Typically used on ribs, the age old favourite, Barbecue sauce is a superb option to have in your locker for when the need arises. Below we provide you with the basic ingredients to try,
BBQ Sauce Ingredients
1 tbsp of olive oil
1 finely chopped onion
400g can of chopped tomatoes
3 finely chopped garlic cloves
85g of brown sugar
3 tbsp of malt vinegar
2 tbsp of worcester sauce
1 tbsp tomato puree
To make the sauce sweeter, use tomato ketchup instead of the chopped tomatoes.
How to make the BBQ sauce
Add the olive oil to a saucepan and then add the onion. Cook ob a gentle heat for about 4-5 mins until softened. Then add the remaining ingredients and add seasoning. Bring the mixture to the boil and simmer for between 20-30 mins until nice and thick. If you want a smoother sauce simply blend the mixture prior to placing in the saucepan.
When done, add the sauce to ribs or any other meats that you desire, by smothering over the meat and leave in the fridge for upto 24 hrs if possible prior to cooking, to soak into the meat. When ready, simply cook as normal on your BBQ for a superb smoky BBQ taste.

Cajun Rub Ingredients
1/4 cup Coarse Salt
1/4 cup Paprika
1 T Dried Thyme
1 T Dried Oregano
1 T Coarse Pepper
1 T Onion Powder
1 T Garlic Flakes (or Granulated)
2 t Cayenne Pepper
1 t Ground Bay Leaf
How to make the Cajun Rub
Combine all ingredients in a bowl. Dependent upon the level of heat required, add more Cayenne Pepper. Make sure the mix is mixed well and then simply rub on your favourite meat. Let the meat stand for at least an hour for maximum flavour. If you want the rub to penetrate the meat further, add a tbsp of olive oil to the mix before rubbing onto the meat and then leave overnight in the fridge.
